IThe idea

Everything we serve has met the fire. Some of it for hours, some of it for a single breath. We cook for twenty-two guests a night in a canal house from 1683, with nothing but oak, patience and the finest produce of the Low Countries.

Oysters, lemon and a cold glass of Chablis. Our very first course, in 2019.

IIIThe fire

From first sparkto last ember.

06:30The fire is litBefore the city wakes, Sacha lights the oak. It will not go out until the last guest has gone home.
15:00Embers, not flamesBy afternoon the fire settles into a bed of embers that glows at nine hundred degrees. Only then do we start to cook.
19:30The last touchEvery plate is finished by hand at the pass, in the warm light of the hearth, and carried to your table at once.

IVThe chef

Sachavan Aelst

Chef and owner

Fire is the oldest cookin the world. I only tryto listen to it.

Sacha grew up between a bakery oven and the beaches of Zeeland, cooked in Copenhagen, San Sebastián and Lyon, and came home in 2019 to open Cendre in a canal house that had stood empty for eleven years.

There is no gas line in our kitchen. Everything, from the bread to the last chocolate, is cooked over the same oak fire.
